Baghlaw-e-Khanagi
Here is a straightforward way to make Baghlaw-e-Khanagi at home, with a clear ingredient list and step-by-step instructions you can follow without guesswork. Low and slow is the secret — the longer simmer lets eggs soften and the flavours deepen. Read through the tips before you start — a couple of small details go a long way with this one.
- Level Medium
Ingredients
- 600 g Flour
- 3 Eggs
- 450 ml Milk
- 75 ml Vegetable Oil
- 1 tsp Baking Powder
- 50 g Walnuts
- 10 g Cardamom
- 300 g Sugar
- 1 l Water
Method
- Place flour in a bowl, and create a hole in the middle of the flour. Whisk eggs, and then pour whisked eggs into the well.
- Add milk, and combine. Then, stir in the ground walnuts, baking powder and cardamom, and add to the mixture. Fold ingredients into the mixture until it forms an elastic dough consistency.
- Take dough and with a rolling pin, roll out into a thin rectangle on a clean surface. Then, from the longest side of the rectangle, fold the dough into 3cm-wide lines, until the dough is fully rolled in a long line. Cut folded dough horizontally into 3cm pieces
- Heat a deep pan of the vegetable oil, and wait till it reaches frying temperature. Whilst you are waiting. Fill a deep pan with 1 litre of water, and bring to the boil. Then, pour in the sugar, and stir gently until it becomes thick and syrup-like. Turn down the heat and leave to simmer.
- Carefully lower each piece of dough into the frying oil. Fry until golden brown.
- When golden brown, take the Baghlaw pieces out of the oil, and place them into the sugar syrup to coat.
- Remove from the syrup and whilst still warm, sprinkle with ground walnuts, so they stick to the Baghlaw.
- Leave to cool. Then, enjoy with your friends and family!
Tips for the best Baghlaw-e-Khanagi
- Taste as you go. Seasoning at the end is fine, but adjusting halfway through gives a more balanced result.
- Rest the finished dish for a few minutes before serving — it lets the flavours settle and the texture firm up.
- Read the whole method before you start and measure out the 9 ingredients first — it keeps the pace relaxed once the heat is on.
Variations
- Slow cooker: brown everything first, then cook on low for 6–8 hours instead of simmering.
- Vegetable boost: stir in a handful of spinach, peas or diced peppers in the last few minutes of cooking.
- Swap the egg for silken tofu — keep the cooking time similar and check for doneness.
Serving ideas
Dust with icing sugar just before serving and pair with coffee or tea.
Storage
Keeps in an airtight container at room temperature for 2–3 days, or refrigerated for up to a week. Most versions freeze well for 2 months.
