Beef Asado
This Beef Asado recipe is built around ground beef, and it comes together in about under an hour from start to finish. It sits firmly in the Filipino tradition, so expect the flavours you would get from a good home kitchen there. Read through the tips before you start — a couple of small details go a long way with this one.
- Level Hard
Ingredients
- 1 ½ kg Ground Beef
- 1 Beef Stock Concentrate
- 8 oz Tomato Puree
- 3 cup Water
- 6 tbsp Soy Sauce
- 1 Tbs White Wine Vinegar
- 2 Tbs Pepper
- 4 Bay Leaf
- ½ Lemon
- 2 Tbs Tomato Sauce
- 3 Tbs Butter
- ½ cup Olive Oil
- 1 Chopped Onion
- 4 clove Garlic
Method
- Combine beef, crushed peppercorn, soy sauce, vinegar, dried bay leaves, lemon, and tomato sauce. Mix well. Marinate beef for at least 30 minutes.
- Put the marinated beef in a cooking pot along with remaining marinade. Add water. Let boil.
- Add Knorr Beef Cube. Stir. Cover the pot and cook for 40 minutes in low heat.
- Turn the beef over. Add tomato paste. Continue cooking until beef tenderizes. Set aside.
- Heat oil in a pan. Fry the potato until it browns. Turn over and continue frying the opposite side. Remove from the pan and place on a clean plate. Do the same with the carrots.
- Save 3 tablespoons of cooking oil from the pan where the potato was fried. Saute onion and garlic until onion softens.
- Pour-in the sauce from the beef stew. Let boil. Add the beef. Cook for 2 minutes.
- Add butter and let it melt. Continue cooking until the sauce reduces to half.
Tips for the best Beef Asado
- Rest the finished dish for a few minutes before serving — it lets the flavours settle and the texture firm up.
- Do not crowd the pan. Cook in batches if needed so everything browns instead of steaming.
- Let the beef come up to room temperature for 15 minutes before cooking so it cooks evenly.
- This is a 8-step recipe, so set up your workspace in the order the steps use it.
Variations
- Slow cooker: brown everything first, then cook on low for 6–8 hours instead of simmering.
- Spicier version: add a pinch of chilli flakes or a sliced fresh chilli with the aromatics.
- Vegetable boost: stir in a handful of spinach, peas or diced peppers in the last few minutes of cooking.
Serving ideas
Pairs well with a simple salad and a glass of something cold.
Storage
Best eaten fresh. Leftovers keep covered in the fridge for 2 days; reheat in a hot pan or oven rather than the microwave to bring the crispness back.
