Brigadeiro (Brazilian Chocolate Fudge)
Brigadeiro (Brazilian Chocolate Fudge) is a Brazilian classic for good reason — (395 g) of sweetened condensed milk does most of the work, and the method is approachable enough for a weeknight. It is naturally vegetarian, so it suits mixed tables without any substitutions. Scroll down for the ingredients, the step-by-step method, and answers to the questions we get asked most about it.

- Total 45 min
- Level Medium
Ingredients
- 1 can (395 g) of sweetened condensed milk
- 1 tbsp Butter
- 3 tbsp Cocoa Powder
- 1 Box (482 g) of chocolate sprinkles
Method
- In a heavy saucepan, combine the milk, cocoa powder, and butter. Stir to dissolve the chocolate.
- Put over low heat and stir constantly to avoid formation of lumps.
- Continue stirring for 10–12 minutes, or until you are able to see the bottom of the pot for one second when you scratch it side-to-side with the spoon. The more you cook, the harder the resulting candy will be—it may vary from liquid fudge to hard candy.
- Allow mixture to cool.
- Butter your hands, and roll the mixture into small balls (around 2 cm in diameter). Alternatively, you can use two metal spoons to shape the candies. Roll them in the chocolate sprinkles.
Tips for the best Brigadeiro (Brazilian Chocolate Fudge)
- Read the whole method before you start and measure out the 4 ingredients first — it keeps the pace relaxed once the heat is on.
- Keep the simmer gentle. A hard boil toughens (395 g) of sweetened condensed milk and drives off the liquid too fast.
- Use a kitchen scale for the dry ingredients if you have one — baking is less forgiving than cooking.
Variations
- Fusion twist: keep the method but swap the spices for your own favourites — the Brazilian base takes well to it.
- Spicier version: add a pinch of chilli flakes or a sliced fresh chilli with the aromatics.
- Slow cooker: brown everything first, then cook on low for 6–8 hours instead of simmering.
Serving ideas
Best with fresh berries on the side and a little whipped cream.
Storage
Keeps in an airtight container at room temperature for 2–3 days, or refrigerated for up to a week. Most versions freeze well for 2 months.
