Chupaqueso
This Chupaqueso recipe is built around about 3 oz, and it comes together in about 10 minutes from start to finish. A hot pan and a little patience give you the kind of colour and texture that makes this dish. Read through the tips before you start — a couple of small details go a long way with this one.
- Cook 10 min
- Total 10 min
- Serves 1
- Level Easy
Ingredients
- About 3 oz, 85 g) shredded "shell" cheese (e.g. cheddar
- About 1 oz, 28 g) shredded "filler" cheese (e.g. parmesan, Monterey Jack
- Example toppings:
- Bacon
- Chopped cold cuts
- Banana peppers
- Chili peppers
- Marinated mushrooms
- Marinara sauce
Method
- In a medium-large non-stick or cast-iron skillet, sprinkle the "shell" cheese evenly. It will melt and bubble, and eventually form a layer of cheese.
- Once the underside is orange or brown colored, flip it over.
- Sprinkle the filler cheese down the middle, and put whatever toppings you want down the middle.
- Fold the shell over, and let it cook long enough to melt the filler cheese if desired.
- Serve and eat right away.
Tips for the best Chupaqueso
- For a milder version, remove the chilli seeds; for more heat, add them at the start so the oil picks it up.
- Taste as you go. Seasoning at the end is fine, but adjusting halfway through gives a more balanced result.
- Do not crowd the pan. Cook in batches if needed so everything browns instead of steaming.
- Read the whole method before you start and measure out the 9 ingredients first — it keeps the pace relaxed once the heat is on.
Variations
- Vegetable boost: stir in a handful of spinach, peas or diced peppers in the last few minutes of cooking.
- Mild version: halve the chilli and finish with a spoon of yoghurt or cream to soften the heat.
Serving ideas
Serve hot with rice, potatoes or crusty bread, and something green on the side.
Storage
Best eaten fresh. Leftovers keep covered in the fridge for 2 days; reheat in a hot pan or oven rather than the microwave to bring the crispness back.
