- Total 1h
- Serves 4
- Level Easy
Ingredients
- 1 cup (240 ml) commercially-prepared baking mix or biscuit mix
- ¼ cup Brown Sugar
- 1 Egg
- 1 oz (30 g) butter
- ½ tsp Cinnamon powder
- ¼ tsp Powdered ginger
- ¼ tsp Ground Nutmeg
- 2 Soft-textured apples, sliced
- 1 Splash of grapefruit or lemon juice
- ½ tsp Cinnamon powder
- ¼ tsp Powdered ginger
- ¼ tsp Ground Nutmeg
- 3 tbsp Baking mix or biscuit mix
- 3 tbsp Brown Sugar
Method
- Combine the baking mix, egg, brown sugar, and spices in a bowl.
- Rub the butter into the base mixture with your fingers. The mixture should not be sticky.
- Line an 8 by 8-inch (20 by 20 cm) baking pan with parchment paper.
- Press the base mixture into the bottom of the baking pan (you might want to press it up the sides a little).
- Toss the sliced apples in the grapefruit or lemon juice, distributing the juice evenly.
- Combine the cinnamon, ginger, nutmeg, baking mix, and brown sugar.
- Toss most of the spice mix with the apples. Reserve the remaining spice mix.
- Tip the lightly coated apples on top of the prepared base in the pan. Try to arrange the slices to have an even layer.
- Sprinkle the remaining spice mixture on top of the apples.
- Preheat oven to 375°F (190°C).
- Bake for 30 minutes at 375°F (190°C).
- After allowing it to cool, you can lift the slice out of the baking pan by the corners of the parchment paper and put it on a plate for easy slicing.
Tips for the best Apple Bars
- Do not crowd the pan. Cook in batches if needed so everything browns instead of steaming.
- Let the egg come up to room temperature for 15 minutes before cooking so it cooks evenly.
- Use a kitchen scale for the dry ingredients if you have one — baking is less forgiving than cooking.
- This is a 12-step recipe, so set up your workspace in the order the steps use it.
Variations
- Spicier version: add a pinch of chilli flakes or a sliced fresh chilli with the aromatics.
- Vegetable boost: stir in a handful of spinach, peas or diced peppers in the last few minutes of cooking.
- Individual portions: divide into ramekins or a muffin tin and reduce the baking time by about a third.
Serving ideas
Dust with icing sugar just before serving and pair with coffee or tea.
Storage
Keeps in an airtight container at room temperature for 2–3 days, or refrigerated for up to a week. Most versions freeze well for 2 months.
