Beer Cheese Risotto
Beer Cheese Risotto is a classic for good reason — chopped onion does most of the work, and the method is simple enough for a weeknight. A hot pan and a little patience give you the kind of colour and texture that makes this dish. Below you will find the full ingredient list, the method, and a few tips we think make the difference.
- Level Medium
Ingredients
- ½ large Chopped Onion, diced
- 1 tbsp Olive Oil
- 1 cup Uncooked arborio rice
- 10 ½ cup Hot Vegetable Stock, approximate
- ½ cup Beer
- ¼ cup Grated Parmesan cheese
- ¼ cup Shredded sharp cheddar cheese, to taste
Method
- Heat the stock to near boiling. Keep hot.
- Sweat the onion in a heavy, medium saucepan with the olive oil, adding a generous pinch of salt. When the onions are soft and transparent, add the rice, sautéeing until each grain is coated.
- Add the beer and heat to simmer, stirring constantly. When the beer is mostly absorbed, add around ?
- Remove from heat, adding the Parmesan cheese and stirring to incorporate. Give the cheese a chance to dissolve and melt, then add the cheddar. Stir to melt and incorporate. If a cheesier rice is desired, add more.
Tips for the best Beer Cheese Risotto
- Keep the simmer gentle. A hard boil toughens chopped onion and drives off the liquid too fast.
- Rest the finished dish for a few minutes before serving — it lets the flavours settle and the texture firm up.
- Read the whole method before you start and measure out the 7 ingredients first — it keeps the pace relaxed once the heat is on.
- Do not crowd the pan. Cook in batches if needed so everything browns instead of steaming.
Variations
- Slow cooker: brown everything first, then cook on low for 6–8 hours instead of simmering.
- Spicier version: add a pinch of chilli flakes or a sliced fresh chilli with the aromatics.
- Vegetable boost: stir in a handful of spinach, peas or diced peppers in the last few minutes of cooking.
Serving ideas
Finish with fresh herbs and serve family-style in the middle of the table.
Storage
Best eaten fresh. Leftovers keep covered in the fridge for 2 days; reheat in a hot pan or oven rather than the microwave to bring the crispness back.
