Bison Loaf
Make Bison Loaf once and it will go straight into your regular rotation. Prep takes about under an hour, cooking around 1 hour, and it serves 12. A hot pan and a little patience give you the kind of colour and texture that makes this dish. Read through the tips before you start — a couple of small details go a long way with this one.
- Cook 1h
- Total 1h
- Serves 12
- Level Medium
Ingredients
- 2 lb (900 g) ground bison meat
- 10 ½ cup Soft bread crumbs (from about 2 slices of bread) or 0.5 cup fine dry bread crumbs
- 1 Egg
- ½ cup 1% milk
- ½ cup Chopped Onion
- ½ medium Green Pepper, chopped
- 2 tsp Worcestershire Sauce, optional
- 1 tsp Garlic Powder
- ½ tsp Salt
- ½ tsp To taste Pepper
Method
- In a large bowl, mix all ingredients together.
- Form meat mixture into a loaf or pat into a lightly-oiled loaf pan.
- Bake in a 300°F (150°C) oven for 45 minutes until internal temperature reaches 160°F (72°C).
Tips for the best Bison Loaf
- Let the egg come up to room temperature for 15 minutes before cooking so it cooks evenly.
- Do not crowd the pan. Cook in batches if needed so everything browns instead of steaming.
- Taste as you go. Seasoning at the end is fine, but adjusting halfway through gives a more balanced result.
- Read the whole method before you start and measure out the 10 ingredients first — it keeps the pace relaxed once the heat is on.
Variations
- Swap the egg for silken tofu — keep the cooking time similar and check for doneness.
- Individual portions: divide into ramekins or a muffin tin and reduce the baking time by about a third.
- Vegetable boost: stir in a handful of spinach, peas or diced peppers in the last few minutes of cooking.
Serving ideas
Serve hot with rice, potatoes or crusty bread, and something green on the side.
Storage
Best eaten fresh. Leftovers keep covered in the fridge for 2 days; reheat in a hot pan or oven rather than the microwave to bring the crispness back.
