Buffalo Chicken Sandwich
Few sandwich recipes are as satisfying as a well-made Buffalo Chicken Sandwich. The star here is oil for frying, supported by a short list of everyday ingredients. A hot pan and a little patience give you the kind of colour and texture that makes this dish. Read through the tips before you start — a couple of small details go a long way with this one.
- Serves 1
- Level Easy
Ingredients
- Oil for frying
- ½ cup Flour
- ½ tsp Salt
- ½ cup Milk
- 1 Chicken Breast, pounded flat
- 1 Hamburger bun
- 1 Leaf green leaf lettuce
- 2 Tomato slices
- 1 Red onion, if it's strong, only use a few rings
- 2 tbsp Hot sauce
- Blue cheese dressing
Method
- Heat just enough oil to cover chicken to 350 °F (175°C) in a large frying pan or a deep-fryer.
- Stir together flour and salt. Dredge chicken in milk, then flour mixture, again in milk, then flour a second time. Refrigerate chicken for 10–15 minutes.
- Deep fry chicken in oil for 10 minutes or until golden brown. Drain on a rack.
- Toast or grill the face of the bun.
- Put chicken in a bowl with a lid. Add hot sauce, put lid on, and shake gently to coat.
- Put chicken on bun and top with lettuce and tomato. Serve open face, with blue cheese dressing on the side.
Tips for the best Buffalo Chicken Sandwich
- Do not crowd the pan. Cook in batches if needed so everything browns instead of steaming.
- Rest the finished dish for a few minutes before serving — it lets the flavours settle and the texture firm up.
- Let the chicken come up to room temperature for 15 minutes before cooking so it cooks evenly.
- Taste as you go. Seasoning at the end is fine, but adjusting halfway through gives a more balanced result.
Variations
- Vegetable boost: stir in a handful of spinach, peas or diced peppers in the last few minutes of cooking.
- Swap the chicken for turkey or firm tofu or chickpeas — keep the cooking time similar and check for doneness.
- Mild version: halve the chilli and finish with a spoon of yoghurt or cream to soften the heat.
Serving ideas
Pairs well with a simple salad and a glass of something cold.
Storage
Best eaten fresh. Leftovers keep covered in the fridge for 2 days; reheat in a hot pan or oven rather than the microwave to bring the crispness back.
