Few side recipes are as satisfying as a well-made Burek. The star here is packet filo pastry, supported by a short list of everyday ingredients. Most of the time is hands-off while the oven does its thing, which makes it an easy one to fit around other dishes. Below you will find the full ingredient list, the method, and a few tips we think make the difference.

Ingredients

Method

  1. Fry the finely chopped onions and minced meat in oil. Add the salt and pepper. Grease a round baking tray and put a layer of pastry in it.
  2. Cover with a thin layer of filling and cover this with another layer of filo pastry which must be well coated in oil. Put another layer of filling and cover with pastry. When you have five or six layers, cover with filo pastry, bake at 200ºC/392ºF for half an hour and cut in quarters and serve.

Tips for the best Burek

  • Rest the finished dish for a few minutes before serving — it lets the flavours settle and the texture firm up.
  • Let the beef come up to room temperature for 15 minutes before cooking so it cooks evenly.
  • Preheat the oven fully before anything goes in — a cold start changes the texture.

Variations

  • Spicier version: add a pinch of chilli flakes or a sliced fresh chilli with the aromatics.
  • Swap the beef for lamb or mushrooms or lentils — keep the cooking time similar and check for doneness.
  • Fusion twist: keep the method but swap the spices for your own favourites — the Croatian base takes well to it.

Serving ideas

Works well as a starter with warm bread.

Storage

Best eaten fresh. Leftovers keep covered in the fridge for 2 days; reheat in a hot pan or oven rather than the microwave to bring the crispness back.
